Tonight's Reception

As you may have read, husband and I have been taking the "Fireproof Your Marriage" class at church, based on the movie Fireproof starring Kirk Cameron. Tonight was the final class and we were responsible for the refreshments. Here is what I prepared and served:

"Love Me Tenders"
"Fruits of Our Love"

"Song of Solomon" Aphrodisiacs
(don't be shocked and read Song of Solomon...the true love story of the Bible)

"Marriage isn't for Chickens" Salad
"You're the Apple of my Eye" Dumplings
"I'm Nuts About You!"
"I Love You Even When You Are Crabby" Cups
(crab salad)
and finally,
"We've Fireproofed Our Marriage"
MILD salsa and chips

Everyone thoroughly enjoyed themselves and the food disappeared quickly. Luckily we got the guest speaker's plate fixed before everything was gone. But husband and I had just a few bites of what was left.
Recipes (I double the following recipes for our reception):
"I Love You Even When You Are Crabby" Cups
1 lb. flake crab meat (I used backfin crabmeat)
1/2 cup diced celery
1 T minced green onion
1 1/2 T fresh lemon juice
1/2 cup mayonnaise
1/2 tsp salt
1/4 tsp pepper
frozen mini phyllo shells
Combine crabmeat, celery, and green onion in a medium bowl. In a small bowl, stir together the lemon joice, mayo, S & P. Pour over the crab mix and stir gently to combine.
Spoon into phyllo shells.

"Marriage isn't for Chickens" Salad
3 cups chopped, cooked chicken
1 1/2 cups seedless red-grape halves
1 cup chopped celery
1/2 cup chopped walnuts (I used pecans)
1 1/3 cups mayo
1/2 cup honey
In a large bowl, combine chicken and next 3 ingredients. In a small bowl, combine mayo and honey. Spoon mixture over chicken; toss gently to coat. Cover and chill.

(Tastes great on croissants as well)
"You're the Apple of my Eye" Dumplings
2 granny smith apples
2 cans crescent rolls
2 sticks butter
1 1/2 cups sugar
1 tsp vanilla
1 12 oz. can Mountain Dew
cinnamon
Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll.
Place in a 9 x 13 buttered pan.
Melt butter, then add sugar and BARELY stir.
Add vanilla, stir, and pour over apples.
Pour Mountain Dew around the edges of the pan.
Sprinkle with cinnamon and bake at 350 degrees for 40 minutes.
Serve individually or better yet, serve with ice cream, and spoon some of the sweet sauces from the pan over the top.
